When we started rebuilding this restaurant’s stack, we mapped every step of their workflow over three days of screen-sharing calls. What we found was a system that treated availability as a static calendar instead of a living, multi-channel pipeline. Real availability changes when a harvest truck arrives late, a wholesale order gets canceled, or the farm stand sells out of heirloom tomatoes.
